When compared to vacuum sealers, which remove 99.5 per cent of oxygen, oxygen absorbers are 50 times more effective. Because oxygen absorbers in Mylar bags only remove oxygen and not nitrogen or other gases, the volume of gas in the pack is only cut in half. The presence of nitrogen and other gases in the sealed bag will prevent germs from multiplying because they can only live in aerobic (oxygen-rich) settings. Fill the bag only halfway. (Oxygen absorbers will accomplish their job of removing oxygen from the void, leaving just nitrogen.)
2. Before sealing, wipe any residue from the inner and outer edges (especially when storing things like flour or other powdery substances).
3. Only the top of the bag should be sealed (about an inch). This will give you enough room to re-seal the bag if you ever need to cut it open to extract the product (and always replace the oxygen absorber before doing so!). If you're using the Mylar bag to line a food-grade bucket, you can fold the seal down and tuck it inside the bucket for safe storage.
4. In a few days, check the seal. The bag should be compacted in appearance. If it still isn't compressed after a few days, you'll have to cut it open and start over.
5. If at all feasible, keep your food storage below 70 degrees (or even cooler for longer storage shelf life). All food storage products are damaged by heat.
